Breakfast muffins - for dinner





































What could be better for dinner then apple & carrot muffins! After a relatively busy day shopping for our upcoming trip to Thailand and taking in a movie (Michelle Williams really rocked Marilyn by the way) - the last thing I wanted to do was cook a proper dinner. So lazy, am I. Anywho, I made these really delicious organic muffins (they taste much better then the pictures I took). I think the secret is the rolled oats and brown sugar topping sprinkled over the mixture. The cup of organic yoghurt I added gave the muffins a denser texture.
