My favourite quick & easy meal

My most favourite quick meal to make is ramen noodle stir fry. The easiest option is red capsicum, tomato, cucumber, tofu and carrot. I make a sweet chilli and lime dressing and sprinkle mint on the top. It takes 10 minutes to make -which is awesome for when I come home from work starving and literally cannot function until I eat something (which is normally the first thing I see, such as chocolate biscuits or cheese).

There is such a place called Honeyworld

On Sunday we took husband's cousin to Currumbin Sanctuary for the morning. It is a bit overcast so it was a tad on the quiet side, which was nice. We saw many Australian animals- we watched a confused dingo try and escape from its cage for about 20 minutes while kids hysterically yelled 'walkies!"

I wanted to have my picture taken holding a koala but they were sound asleep and curled into the tightest, cutest little balls ever, so I enjoyed them from afar.

On the way out I found a place called Honeyworld. It was delicious. I tried 22 types of honey for free, so that was pretty much the hi-light of my day.

Utilising the humble strawberry

Since we now have an abundance of strawberries, it meant getting creating with receipts. Last night I made a particularly sweet salad. It was sliced strawberries on a bed of spinach layered with chicken breast, walnuts and crumbled blue cheese. I made a homemade raspberry vinaigrette to accompany the salad. It was very fresh and vey tasty. Plus I thought - very pretty.

Strawberry Fields Forever

I love Sundays. I really do. In particular, I love sleeping in with my husband, slowly sipping my morning coffee and having a whole day to ourselves. Today we drove to Glass House Mountains about an hour out of Brisbane for a mid morning hike. It was a really beautiful walk with another amazing view. On the drive home we stopped at a 'pick your own strawberries' farm.
Therefore dinner tonight will be fresh strawberries and yoghurt.

Home... and exhausted...

What a whirl wind trip. In hindsight, it might have been a little adventurous to think I should fill every night with an activity after very heavy work days. As a result, I have arrived back in Brisbane exhausted and a little sniffly. It was so great to catch up with friends and family, which also made it sadder to leave. It was great to get home where pad thai and a bunch of flowers was waiting for me. I am lucky. Today is definitely a recuperation day which will include nothing more then lying on the couch, snuggling with husband and cat, watching movies and eating milk duds. Did I mention it reached 1 degree in Melbourne?

Hot damn! Summer (winter) in the city!

On Sunday, husband I trotted into Southbank to enjoy a long lunch (and a glass or 3 of wine) and a stroll through the markets. Even though its the middle of winter, it felt like a lovely summer day in Melbourne. In fact, there were people sunbathing by the artificial beach. It was so warm that we wore t-shirts and thongs and had the air conditioning on in the car. On the way back to the car, I had a call from my mother in Melbourne - apparently they are having a ridiculously cold winter. Pack warmly, she advised. Perhaps take some extra singlets. It looks like I am going from one extreme to another!
